During harvest grapes are typically picked at night or in the early morning hours to allow fermentation to begin at the lowest possible temperature. Here we see a sorting table where grapes are hand sorted. Highly prized Napa Valley wines can be hand sorted on 3-5 occasions before being allowed to begin fermentation. |
